Begin your event planning by learning the history. Cinco de Mayo (The 5th of May) celebrates the Mexican militia's victory over the well-armed French in 1862. At the Battle of Pueblo, 4,500 Mexican forces overcame 6,040 French, losing only 83 soldiers to France's 462. Contrary to popular belief, this is not the country's Independence Day. Independence was won in September more than 50 years prior to the battle. In Mexico, the holiday is celebrated only in Puebla.
Now that you know the history, decide on a menu. Don't serve Americanized food like nachos or tacos with cheddar cheese; choose something authentic. Chicken dishes can be easy to make and are very flavorful. Try chicken tacos with green chilies and beans. Bake chicken with mole sauce, which can be made with peppers, chocolate, bananas and other ingredients. For dessert, try sautéed plantains.
